Creamy Carrot Vegan Soup Recipe

Feeling heavy, bloated and sluggish with insatiable sugar cravings? You’re certainly NOT alone, especially given the current holiday season (hello, STRESS!) and everything mental, physical and emotional surrounding COVID-19…

But, good news, I’ve got your back!

One of my top tips for keeping weight in check and cravings at bay is to incorporate soups into your regime. Packed with veggies and low in sugar, soups contain a plethora of vitamins, minerals and fiber - nutrients that energize, balance and sustain.

Great as a mid-morning snack or accompanied by a salad at dinner, clean and nourishing soups, such as the one I’m sharing today, can also be included in a detox protocol.

Creamy Carrot Detox Soup Recipe:

Ingredients:
1 1/2 tbsp. refined coconut oil
2 cloves fresh garlic, minced
1 large yellow onion, diced
4 large carrots, diced
1 medium sweet potato, chopped into 1-inch pieces
1 small head of cauliflower, chopped
1 tbsp. Italian seasoning blend
2 tsp. dried thyme
2 tsp. sea salt
Fresh black pepper, to taste
5 cups low sodium veg broth or grass-fed bone broth (non-vegan option for additional protein)
1/4 c. full-fat coconut milk

Yield: 6-7 servings

Instructions:

  1. Melt the coconut oil in the bottom of a pre-heated large stockpot. Add the garlic and onions and sauté over medium heat for 2 minutes or until onions become fragrant and translucent.

  2. Add carrots, sweet potato, cauliflower, seasonings, salt and pepper, and sauté for an additional 4 minutes, stirring occasionally.

  3. Add bone broth, stir and bring to a boil, then reduce the heat to a simmer, cover with a lid and allow the soup to cook for 12-15 minutes, or until carrots are fork-tender.

  4. Add coconut milk and cook for an additional 5 minutes.

  5. Remove from heat and allow to cool, then add to a high-powered blender and puree until smooth.

  6. Enjoy immediately or store in glass containers in the refrigerator for up to 5 days.
