Coconut Yogurt Recipe

Dairy is one of the top inflammatory foods, alongside gluten and sugar. Whether you’re looking to cut back or go completely dairy-free, this DIY yogurt recipe can help you make the transition with ease. Plus, it’s a LOT cheaper than what you’ll find at the grocery store!

Packed with digestion-supportive probiotics, metabolism-boosting MCTs (medium-chain triglycerides) and brain-boosting fats—and without preservatives, gums, stabilizers or flavoring agents—coconut yogurt is tangy, creamy and super clean. Coconut Yogurt Recipe:

Ingredients:
1 can full-fat coconut milk
2 probiotic capsules

Yield: 6-8 servings

Instructions:

  1. Shake the can of coconut milk well, then open and pour the contents into a clean, sterilized* glass jar. *Note: sterilize by rinsing the jar thoroughly with boiling water, then allowing it to dry out and cool completely before using.

  2. Open and empty probiotic capsules into the coconut milk and use a wooden* spoon to stir until all powdery clumps are broken up and the contents of the capsules are well-dispersed. *Note: do NOT use a metal spoon—it can have a negative reaction with the probiotics and diminish their potency.

  3. Cover the glass jar with a tilted lid or cheesecloth (secured with a rubber band) to allow a small amount of air flow. Then, store in a warm, dark place such as a closed kitchen cabinet.

  4. Allow the coconut milk/probiotic mixture to sit for 24 hours, then stir with a wooden spoon, repeat step 3 and return the mixture to the cabinet. Allow it to sit for another 24 hours.

  5. Smell or sample after the complete 48 hours to ensure that it’s to your desire tanginess. If not, repeat steps 3 and 4 ( for a total of 72 hours of fermentation).

  6. Once complete, cover tightly with a lid and transfer to the refrigerator where it will naturally thicken into a more yogurt-like consistency.

  7. Enjoy within 7 days of making.
